The Lazy Cherry Cake

This is a cake for lazy people. I felt so lazy after making it that i had to go running. Well, maybe that’s because I wanted to EAT it…haha…anyway when you find cherries on sale, you should get them and make this. It’s simple, easy and delish!

I made this for dessert, but this could pass for a brunch pastry and totally naughty breakfast.

We have cherry trees now and I got these off of the dark cherry tree (not sure the exact species). They are fairly sweet with a hint of tart. Certainly not sour cherries. Any cherry will do, just add a bit more sugar to the second part if you have sour cherries.

Lets begin.

Lazy Cherry Cake

1 stick butter
1 cup flour
1 cup sugar
1 cup milk
1 tsp. baking powder
2 cups pitted fresh cherries
1/2 cup sugar
1 T. Flour
Dash of cinnamon

Preheat oven to 350. While oven is warming up, place the stick of butter in a 9×13 pan and place in the oven, to melt.

In a medium bowl, combine flour, sugar, milk and baking powder. Mix well.
When butter has melted, remove pan from oven and scrape batter into pan. No need to mix with the batter, just spread it out evenly.
In the same bowl, toss cherries in a little sugar and the flour and cinnamon. Add to pan, evenly distributing the cherries.
Bake for 45-50 minutes or until edges are brown and batter is set (toothpick test).
