Paleo Banana Bread

I say “bread” but these muffins have no flour. They are jam packed with nutrients, low in carbs, and contain no refined sugar.

They’ll even pass the husband/kid test.

I could go on about how they are gluten free too, but I don’t want you to think I’m selling out.

Plus, they are just gorgeous.

Paleo Banana Muffins

Preheat oven to 350 degrees.

Mix dry ingredients in a large bowl:

  • 2 cups almond flour (ground almonds)
  • 1/4 c. flaxseed meal
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2/3 cups chopped walnuts

Mix wet ingredients in a small bowl:

  • 3 over ripe bananas, mashed **
  • 1 T. vanilla
  • 3 eggs, beaten
  • 2 T. honey
  • 3 T. coconut oil (melted)
  • 2 T. natural almond butter

** Since this recipe doesn’t have a lot of sugar, it is CRUCIAL that these bananas are the ripest they can be. Like when the skin turns solid black.

Combine wet ingredients into dry ingredients. Stir until combined. Spoon batter into muffin cups. Bake 20 minutes, or until the toothpick test shows they are done.

Makes 1 dozen.
