Curried Egg Sandwiches with Dill

Recently, I’ve been thinking that I’m a little sheltered when it comes to spices. So I decided to try a little something different with my egg salad.

Granted, this isn’t an authentic middle eastern recipe. But its a baby step, ya know?

I could have eaten ten of these sandwiches. The flavors (including the eggs) were so fresh and satisfying. And I just love the vibrant color- mostly from the farm eggs but part from the mustard and curry.

This isn’t a precise recipe, as everyone likes their egg salad a little different. For instance, I used Miracle Whip. (gasp!)

I know, I know……but I like it, so lay off.

Curried Egg Sandwiches

4 medium boiled eggs
1/4-1/3 c. mayo
1 T. stone ground mustard
1/2 t. yellow curry powder
1-2 T. chopped fresh dill
generous amount of salt and pepper.

Just cube the eggs and mix it all together. This is great even without the bread. Serves 2.

I have finally archived all my recipes. Yes, I was aware that my archives previously only covered the first 2 years of this blog. And now they are completely up to date- thanks to a little help from my friends….. :)

Having programmers who can build HTML and JAVA from scratch is really helpful. I only had to make them a bunch of Orange Julius. Sounded like a fair trade to me! :) THANKS JUSTIN AND JUSTIN!
