The oh so NOT starving blog post about saving a little holiday cash

Its been a little crazy around here the last few weeks. I’m amazed everyday at how little I got accomplished and at how HUGE the laundry pile is growing. Its really starting to become the “elephant” in the room.

Realization #1: Having two kids is more time consuming than one.

Realization #2: Having two kids is expensive, “Hello, hospital bill…I thought you’d wait until after the holidays.”

Thus the inspiration behind this blog post. I’m keeping it real today, folks.

So in an effort to clean out our pantry and simultaneously save a few extra dollars for the holidays, Justin and I have decided to refrain from grocery shopping for the next few weeks. Yes, we still have to go for milk and Dora fruit snacks, but aside from those “necessities” we are in this for the long haul!

We are already in week 2, and I’m pleased with how well this is going. AKA: We aren’t starving (far from it), and we haven’t quit yet! Yes, we still have our CSA share, and that will help us a little!

Here is the sad part, MY PANTRY IS STILL FULL! See- I have proof! Look at those shelves, they’re full!

Here’s the “snack” section, also full:

And, MY REFRIGERATOR AND FREEZER ARE STILL FULL! Apparently, I have been “over-buying” for a long, long time.

So now I am challenged with both being resourceful and creative. How to use all this stuff without buying more junk to store in the pantry?

So far we’ve had: Grilled honey Ham steaks with potato leek hash, Grilled chicken on Penne with Primavera Sauce, Lasagna, waffles, salads, pizzas…..

And next week we’re looking forward to: Hot dogs with onion rings, chicken enchiladas, tortilla soup, lobster bisque, french onion soup, Hamburger Helper (oh yeah, baby!), grilled Tuna Panini sandwiches, Little Smokies with Mac and Cheese, fried rice, teriyaki noodles with Asian veggies, cranberry glazed chicken thighs- or maybe Shake and Bake…..there are so many choices!

We haven’t even touched on what I could do with beans yet…..

I really think I could eat here for weeks! We may be eating like a starving college bachelor- but we won’t be starving!
