I’ve mentioned recently that I can’t get enough tomatoes this season. Maybe because a ruby red tomato seems to be in short supply (the low temperatures, maybe?), but mine are slowly turning red, and I still have a steady supply coming in from our CSA.
I live the colorful heirloom varieties! In this salad I had a bright orange variety and a “tiger” green variety- which surprisingly didn’t taste “green” at all! There were also some red cherry and yellow cherry tomatoes thrown in for good measure.
….and I still can’t get enough of this salad. I promise I’ll stop talking about it after tomato season. (tear…) Its my go-to for when its just me and Jos to cook for. Not that Justin doesn’t like it, but there’s never been enough left to share
We made it a well-rounded meal with a cheesy quesadilla. And I didn’t have any cilantro to use, but it was fine. My cilantro is long gone… thanks to an unknown garden bug and midnight uprooting of sorts.
I can’t wait to share about my victory with herbs this year (which sadly doesn’t include any cilantro or dill). Stay tuned for a tutorial on an easy way to dry herbs and my yummy Italian seasoning.
