Tomato Avocado recipe for your Resolutions


Did you know the food network is doing a whole week of healthy food for everyone’s new year’s resolutions? I’m a little skeptical. ‘Cause I’m a little worried that I’ll miss a few of my favorite people.

I mean what’s Paula Deen gonna do with her butter for a whole week? And what about Ina Garten? She’ll have to lay off the cake. Tyler? Guy? What’s going to happen?

I know everyone has a diet on their minds, but sometimes I like to fantasize about food without actually eating it. We’ll be munching our salads without any sugary, buttery cinnamon rolls to drool over. What’s the fun in that?

Okay, okay. Enough. You’ll just have to go to foodporndaily.com to get your fix. Seriously, I love that site.

So here’s my two cents on a simple salad that’ll leave you wishing for more vegetables. I know, hardly possible, right? No, this one is great. Simple easy ingredients and fresh veggies. You’ve got to make this over the weekend. Its TO DIE FOR!

Lets begin.

In a medium bowl combine:
2 heaping spoonfuls black beans (drained, and I just open a can and save the rest for later)
1/4 c. corn ( out of the freezer, 30 sec. in microwave)
3 T. red onion, finely chopped
1 t. cilantro, chopped
1 avocado, diced
6-7 grape tomatoes, quartered

For the dressing, whisk together:
3 T. canola oil (or whatever oil you prefer)
1 T. rice vinegar
1 T. agave nectar (you can also use honey, but agave nectar is the bomb)
2 tsp. lemon juice
salt
pepper

Cover the veggie/bean mix with dressing and eat immediately. I can’t eat brown avocado.

I’m not kidding. This recipe rocks. Make it this weekend- you won’t be sorry. When I finished off the whole bowl, I contemplated making a whole second batch. Then my senses kicked in- just finish it off with a cookie :)
