After Shopping Dinner: Lobster Bisque


I hope all of you (who made the extra effort to get up early and stand in line) got your hands on some spectacular sales. I really admire those who are willing to sacrifice for a deal!

My friend Ashley, her mother and sister plowed through Tanger all night long (they opened at midnight) and then stood in line at 5am for a washer/dryer at Sears. Crazy!
Last year, My brother and his wife spent the night out in the bitter cold to score a LCD TV. People steal out of each other's carts, push and shove to get to the clearance rack.

This is serious dedication to a bargain.

So where was I this morning? We rolled out of bed at the usual time, 7am. Gave Joslyn some milk, threw on clean clothes, tossed a couple cookies in the oven, then woke Justin up, "I'm ready. Are you coming?" Because, lets face it, I'm being SO easy on him! I could have left him all night to shop then come home and slept the day away. But NO! I wanted to shop WITH him, spend quality time......

Its not difficult to imagine how enthused he was. We made it to Dynamic Earth by eight, I made one purchase (with a 5% discount for bringing fresh baked cookies, yes ma'am!), and on we went to Staples and then home.

But for those of you shopaholics who drove through McDonald's on your way home because you were too ravenously hungry to cook something, this recipe is for you!

Its so easy, its stupid. But after a day of tedious work (or shopping) its nice to have a soup like this on standby.

No prep needed.

Cook time less than 10 minutes.

Like I said, so easy and scrumptious!

Lobster Bisque

1 can tomato soup
1 can cheddar cheese soup
2 cups milk
3T. minced lobster (I buy a big bag, freeze it, and just cut off what I want. It defrosts quick and lasts for several batches of this soup)

Combine all in a saucepan and heat slowly. While its heating, stir slowly and think about what you're going to say to your significant other when they realize how much stuff you bought all day. Spend another moment taking a deep breath and say to yourself, "I saved so much money today, he should thank me!"

It will be ready in no time, Just pour into a bowl, top with crusty bread or croutons, and you'll get to prop those sore feet up AND have a sane moment all to yourself. I can't change the inevitable conversation about the day's "earnings", but I can give you a chance to save a couple dollars on a worthwhile dinner.

On my way to work at 6am on Black Friday there was a full parking lot and long line in front of Staples. I know right, Staples? There must have been some great deals on paper clips and printer paper.

I have an official "Foodierachel.com" request...figgy pudding...have you ever tried it? I've never even heard of it other than the song "We wish you a merry christmas", but I'm sure there's a recipe out there and I think you should make it so I can try it.

Super easy and sounds great. I think I have all of those things in my pantry/freezer. Guess what I'm having for lunch?
