Meat and Potatoes
I know some of you were wondering if we ever ate meat around here. Now you know! We had some amazing filets last night with caramelized onions and grilled potatoes.
We also tried some Country Bob's sauce (not that the steaks needed sauce, but you know- Justin NEEDS to use steak sauce and it was good on the potatoes also.) He said it tastes like a cross between A1 and Heinz 57 sauce, which was good- because its the best of both worlds. And as for me, I'm not a steak sauce connoisseur, so I'm just going to take his word for it.
Then I realized that I had never shared my favorite onion recipe on this blog. If you like sweet and savory, oh-so-perfect, eat by themselves onions- then you'll love this!
I heated up a couple tablespoons of butter and a turn of olive oil in a saute pan.
Then added one (or two) sliced yellow onions. After the onions start to sweat and soften, add:
a tsp. of salt
1 tablespoon of brown sugar
2 tablespoons of good balsamic vinegar.
Let everything simmer and bubble for about 20-30 minutes, while all the juices reduce down and the onions turn dark brown.
I serve these on lots of things but my favorite is on baked potatoes, steak, and crusty bread.
Everyone have a safe 4th of July. We're headed down to the Fisher's again. There's going to be lots of food- I'm bringing the broccoli slaw! (and apparently a new picture- sometimes I'm chocked at my horrendous photo taking)
Don't get too crazy with all those fireworks and bonfires. And if you get burnt, go to St. Johns!

Thank God for a three day weekend, I'm in need of one.
I do believe St. Johns is the regional burn center. I'm going to try to keep my butt from catching on fire on my 2 day bike ride.
They are! That's why I suggested that- I wasn't being COMPLETELY sarcastic....
nothing beats steaks and blowing stuff up. if I catch on fire I'll be sure to come straight to you crying "RACHIE I BURNED MY BUTTOCKS!"
I hope you meant YOUR Rachie when you said that, because otherwise I'll just probably hand you some ice cubes.
