Fresh summer food

There is something extremely wonderful about eating fresh crunchy summer foods. I love a summer dinner that doesn’t involve heating up ANYTHING! Yet still leaving dinner completely satisfied and refreshed.

This is one of those dishes. I’d say most people would consider this a side dish, but with the almonds, sunflower seeds, cranberries, red bell peppers, scallions, ramen noodles and loads of broccoli- its a whole meal!

Its even loaded with tons of great vitamins. Did you know that broccoli is the most nutrient dense food? That means you get the most bang for your buck- and this salad is like a broccoli trickster- you don’t even realize how much broccoli you’re eating!

Check the recipe here. You can even make it vegan by using mushroom ramen instead of chicken.

Check out some of my other favorite summer dinners: spicy peanut noodles, confetti couscous, taco salad, green jello.
