
If you’ve been coming to this food blog for very long, you’ll probably know my favorite vegetable: onions. In fact, just last week I found myself in a trance scarfing down a whole pan of roasted onions (with carrots, garlic and a zucchini out of my garden) and Justin had to interrupt me to ask if I was “okay”. Lets just say there wasn’t much left for him.
I tore out of a magazine a recipe for grilled onions wrapped in bacon ages ago. Once being discovered this week, I decided I couldn’t wait any longer!
They were wonderful. You always have a winning combo with onions, bacon and sugar. I mean really, have they ever let you down?
Slice yellow onions into 12 wedges. Wrap with 1/2 slices of thick cut bacon, securing with skewers or toothpicks. (If you use thin cut, the bacon will cook too quick and the onions won’t be ready)
In a bowl combine:
1/2 c. balsamic vinegar
1/2 c. brown sugar
1/4 c. molasses
Pour mixture over onions and let marinate for at least an hour, turning once. Heat grill, place onions on hot grill, discard marinade. (Put ‘em on before the meat- they may take a couple minutes longer.)
