Dinner Quick tip of the week


For those of you that have been needing some ideas to get dinner on the table in a hurry, I’ve got a great tip for you!

Cook whole chickens ahead of time (like on a Saturday), pull the meat off the bone and store in a zip-lock bag to go into anything you’ve got planned. If you don’t have time do even cook the chicken, buy a whole pre-cooked chicken from the deli- just be sure you’re down with the spices they’ve chosen. Plus buying whole chickens is cheaper!

You can throw it into casseroles like my G’ma’s cashew chicken, poppyseed chicken, make chicken salad sandwiches, top off a loaded baked potato, make a big hearty salad (that means it has some meat!), chicken enchiladas, tortilla soup, or even throw some seasoning to make chicken tacos or barbecue chicken sandwiches. The possibilities are endless!
