
This dish is one that I would have never had- if my brother Nick hadn’t married the love of his life, Jerilyn. Jer is from Pennsylvania, and thus had many new “Yankee” foods to introduce to our Ozarks family.
A pierogi is like a ravioli except it is filled with potatoes and sometimes cheese and onions. Jerilyn taught us to always serve it with sausage.
The other night (in leu of trying to make “normal” dinners and “more meat” for Justin) we had these served with sauted onions and bell peppers with a Rachael Ray tomato-pesto sauce.
You can buy pierogies in most grocery stores in the freezer section (little did I know….) and the sausage we used was a smoked Kielbasa.
