
This week I wanted to feature a great dish for adults and kids alike. I’ve been making this since I was a kid. Growing up we had a Betty Crocker cookbook for Boys and Girls. My brothers and I made so many things out of this great cookbook. Its one of those books that shows its wear and tear- yet all the pages are still there!
One of my favorites was bologna cups.
They are so easy to make. Just place a slice of bologna on a hot skillet for 10-20 seconds- just enough to make the edges curl. Place in muffin cups (You need to grease them if using fat free or turkey bologna. For that matter, you could use sliced ham instead…..and top with cheese…..it would be like a hot ham and cheese egg muffin-minus the muffin!)
Then crack an egg in the middle, top with salt, pepper and paprika. And bake for 15-20 minutes at 375 degrees- depending on how you like your eggs.
