
This is how last night’s dinner went:
Me: Mmm! Have you tasted this yet? Its awesome!
Justin: Umm….yeah
Me: What? You don’t like it? I think its really great.
Justin: Yeah, I’m just not feeling it tonight.
Me: Are you KIDDING? I seriously think this is one of the best dinners I’ve made in a while.
Justin: There’s just no meat, maybe if there was meat….How much did you spend on groceries this week?
Me: 120 dollars
Justin: Okay, so you just bought $120 worth of food and we’re eating rice and beans?
Me: Its not just rice and beans. It has mango, roasted red bell peppers, fresh corn, sweet onions…..I made the rice with chicken stock!
Justin: yeah, I think I’m going to have cereal.
So, for those of you who would appreciate a quick, hearty, nutritious, full of protein and DELICIOUS meal even though it doesn’t have any meat…… I guess I’ll just say I made it for you. (Phillip, I don’t even want to hear it!)
I was inspired by this, but didn’t want to go the frozen route. And I just happened to have some mango salsa from the Amish store lurking in the fridge, combine that with fresh corn stalks at 17 cents each- and you have a great inexpensive dinner! (Insert here all those previously listed adjectives for this meal, despite what Justin thinks)
