Daring Baker's Challenge #1

This month was my first month as a Daring Baker! It was a lot of fun and this cake was amazing! Its called Dorie’s Perfect Party Cake. It is a lemon white cake with raspberry preserves and lemon meringue butter cream icing.

It was super delicious! This is one of the first cakes I’ve ever made from scratch (I know……I know….I’m just not a huge cake lover, but that I believe is starting to change). And for being one of the first, I’d say I didn’t do too shabby. It didn’t rise as much as I thought it should have, but the rest was a-okay!

Oh, and I got a chance to use my imported European butter from my loot at the foodie store in KC. Thanks for the tip Glenna!

And speaking of Glenna……I want to tell you that I tried SO HARD to not burn the outside of the cake. I kept telling myself, “Do not let it get brown, take it out a few minutes before its done so it won’t brown.” I watched it like a hawk for (almost) the entire baking process to make sure it didn’t get too done and gross on the outside.

Then I had to turn my attention elsewhere for 2 seconds, and I came back and it was brown! I told Justin, Glenna would be SO disappointed. Well, you can’t always do it right the first time.

Anyway, my family loved it and I’d definitely make this again! The recipe is way too long to post, but if you are interested, shoot me an email at rachel(at)foodierachel(dot)com. I’d be happy to send it along!

Looks wonderful! You did a great job...and guess what! The cake looks white from where I stand...no one would know it "browned." :-)
