
During my 6-day remodel of the bathroom this past week, I certainly worked up an appetite! And created a new favorite dish. I share a love for beans, with my brother Nick, and decided to make a smashed black bean dip (NO lard added!) . Oh, and I had to make some more guacamole too- can’t live without it!
I started with a red onion, because well, I had to chop the rest of the onion for the guac. I sauted it in a little olive oil. Threw in a few pinches of salt, a couple turns of fresh black pepper, and a smidgen of cumin. Then I added one can of rinsed and drained black beans. As they heated up, I smashed them! Add more salt to taste, and top with green onions.
Scoop it all up with some tortilla chips or I used all-natural baked Pita Chips with sea salt. It rocked! You can’t say theres no omega-3′s in that meal! If you call that a meal that is………
