I just LOVE strawberries in my salad. My absolute favorite is in a spinach salad with poppyseed dressing. Now that’s delicious!
But I today I just used what I had in the fridge, and made this strawberry salad a hit! Since I am all out of my favorite dressing, I made my own. Now this is a trick I learned from Rachael Ray.
You just take a little preserves of whatever fruit you are working with- add a little oil, vinegar and sugar- and you’ve got an amazing dressing that compliments the fruit in the salad.
Start with about 2 T. of fruit preserves and whisk in a little oil and vinegar (I used balsamic) then add sugar to taste. Toss in your favorite salad. Wha-la!
