Lately I’ve been trying some of the Food Network recipes. You can only watch so much Food Network without actually trying some of their suggestions. So, I broke down and tried something new. These recipes I really liked and will probably do again.
First up is Emeril’s salmon with Peach Barbecue sauce. I’d give the sauce 5 stars. It is really spicy (for my taste) but it has a great fruit/citrus taste also. It actually contains peaches, orange juice and lemon juice. I’d REALLY like to try it on barbecue chicken.
(Yes that is boring broccoli and Farmgirl’s carrot rolls)
Next is Rachael Ray’s White Cheddar Mac and Cheese. This gets 4 stars. I do think you have to use full fat milk when you make cheese sauce, and certainly learned my lesson here. I think I used 1%- and it showed. However, what I do like about this recipe is it calls for white cheddar, which has a nice bite to it. But she doesn’t stop there, with cayenne pepper added, it gets another punch of flavor.
I did one other Rachael Ray recipe from her 365 cookbook- Salsa Soup and Cheesy Quesadillas. And let me say- WOW! I really liked it. The soup was sort of a Mexican style vegetable soup. And even something as simple as quesadillas were jazzed up with green onions and two cheeses. (Sorry forgot to get a picture.)
