Tuna Cakes

On Paula Deen’s Party a couple days ago, she showcased a few foods that cost dimes to make and can still impress guests. These tuna cakes are one of them. On the show Paula said you could serve these as crab cakes and no one would know the difference. So I decided to try it out.

The verdict: Amazingly tasty! And even better with some homemade tartar sauce. However, I could tell they were made with tuna. And I had no one to lie to because Justin watched me make them. So who knows if I would have fallen for it or not.

After dinner Justin said to me, “I was really skeptical of these things when you were mixing it all together, but they are actually really good. Weird!” (And he didn’t even have to add rooster sauce)

The recipe:
2 cans tuna, drained
1 egg, beaten
2 T. diced green onions
1/4 c. mayo
1/2 c. bread crumbs-regular
sprinkle of lemon juice (I used lime)

Mix all ingredients in a bowl, shape into patties. Dust with additional bread crumbs. Heat oil in a skillet. Fry about 2 minutes on each side. Drain on paper towels. Makes 6 small patties.
