This week we'll take a look at some of my favorite moments from the last year. Starting with a cookbook Ashley got me for graduation: Rachael Ray 365: No Repeats. I absolutely love this cookbook- it has SO many dinner ideas. I really like the Make Your Own Take Out section. It shows you how to make Chinese, Thai, and Indian food. While I rarely make entire dishes from this cookbook, I use it to gather inspiration and key ingredients to make my own creations.
Anyway, this is a 30 minute meal in which I used chicken instead of salmon (because someone complains when I make too much fish). I absolutely love this dish, so full of flavor!

Fish is good, but Endless Shrimp is better!
