
I’m not sure how many times I’ve asked my Aunt Kim to make these for Christmas, but its been several years in a row. Being its only October and I’m already craving them, I decided to make my own to help me through the football games on Sunday. Yes, all of them. Guh.
You see I told Justin that I’d be happy to participate in things that interest him so we could spend more time together, as long as those things DON’T involve World of Warcraft. Never heard of it? Forbid your husbands, seriously. Its like a virus that infiltrates your home and steals your spouse for hours and hours and days and weeks. So, football is much lesser of the two evils.
So anyway, back to Sunday. Justin made a big batch of chili. And again just in case it didn’t sink in. Justin made a big batch of chili. Yes, my husband Justin. And he did an amazing job! We finished it all off with chocolate chip oatmeal cookies from Randi’s new oven.
Start with a package of English muffins, slice the muffins in half and again into fourths. Set aside.
In a mixing bowl, add:
a stick of butter (room temp)
8 oz. Old English cheese (about a jar and a half)
2 T. mayo
1/2 t. garlic powder
1/2 t. Lowry’s seasoning salt
1/2 t. kosher salt
Mix until well combined. Add crab meat- I used one foil packet (4 oz.), but you could use double or triple if you like.
Spread onto muffin wedges- lay it on thick! (Its going to shrink down into the holes if the muffin when it cooks.) Cover and freeze for about 30 minutes. (You can make these ahead of time- up to 3 days, and just let them defrost for 30 minutes) Broil until browned on top (8-10 minutes), and serve immediately while they’re hot! My aunt does the broiling in batches, so as soon as the first batch is devoured a second is coming out of the oven! Enjoy- once you make these, you’ll be asked to do it over and over.
