Broccoli Slaw Salad

Despite its lack of a better name, this salad is delicious. I’m not sure when I first had this salad, I think it originated with Jacque but don’t quote me on that. Anyway, we’ve been making this great salad for years. This is a great way to sneak in TONS of broccoli and other great foods in your diet without really sacrificing any flavor.

Just in case you were wondering, broccoli is the most nutrient dense food. That means the ratio of nutrients to caloric value is extremely good (lots of nutrients: low calorie). So the more broccoli you squeeze in your diet the more you can brag I guess.

Combine the following ingredients in a large bowl:
2 packages broccoli slaw (in the salad greens section)
1 red bell pepper, chopped
1 bunch green onions, chopped
2 packages uncooked crumbled Ramen noodles (chicken flavor-save the seasoning packet)
1 c. sunflower seeds
1 c. slivered almonds
1 c. craisins

Dressing:
1/3 c. sugar
1/3 c. white vinegar
3/4 c. oil (I use EVOO)
2 chicken seasoning packets from Ramen noodles

Drizzle over salad, toss well. This is one of those that is almost better the second day. I love how this salad is really crunchy and packed with flavor. Seriously, you’ve gotta try this one!
