Barbecue Pulled Pork Sandwiches

I finally have a new recipe to post, and I made this by accident. You know how I told you I’ve had some foodie failures lately? Well, I tried to make a nice pork tenderloin with apples and a white wine sauce. Sounds nice huh? Umm. Yeah. Didn’t turn out so well. Edible, but not great.

Anyway, when I bought the pork tenderloin I accidentally bought two. I didn’t know what to do with the second. I really wanted to make pulled pork, but you really need a shoulder roast for that. (Hey Mom, remember when you made a pork roast a few times. Ahh, roast 101. That’s a whole new post. *Insert choking sound here.)

Anyway. For real this time. So, I decided to just try to make pulled pork using my tenderloin, being its a leaner cut of meat- making a lower calorie dish. And it totally worked! I placed a 1 1/2 lb. tenderloin in a crock pot, covered it with water and added the following ingredients:

1 tsp. liquid smoke
The rest I didn’t measure :)
dried onion, crushed red pepper, garlic powder, kosher salt, black pepper, and chili powder

I cooked it on low for 6 hours, shredded it with a fork, smothered it with KC Masterpiece and it was ready to go! MMmm, I love KC Masterpiece.

However, I should add that occasionally when I’m feeling up to it, I make my own barbecue sauce. I start with ketchup (about 1/2 cup) add 3 T. Worcestershire sauce a pinch of brown sugar and McCormick’s Montreal Steak Seasoning- more or less depending on how spicy you like it.
