The other new toy is a mini muffin pan. I don't know why but I have always wanted one of these. This muffin pan doubles as a pastry pan, and of course I also got the mini-tart shaper. This is a wooden mallet looking device that shapes the inside of a pastry like a pie shell. I actually haven't used it yet, but I'm dying to!
Anyway, back to the muffins. This recipe is one that uses all natural ingredients. Its maybe a little vegan-ish (minus the egg), and packed full of fiber! A gal at work suggested that I have some fiber-licious foods on hand after I have that baby. Oh. Did I let the cat out of the bag? Oops!
Here's the recipe:
2 extra ripe bananas
3/4 c. wheat bran
1/4 c. milk
1 egg
1/4 c. honey
2 T. oil
1 c. flour
1 t. baking soda
1/4 t. salt
1/2 c. chopped pecans (no Mom, NOT walnuts)
Combine the wheat bran and milk to soften. Smash bananas with fork. Combine bananas, eggs, honey, and oil. In separate bowl, combine flour, soda, salt and nuts. Add wheat bran and then banana mixture. Fill cups half full. Top with raw sugar crystals or drizzle with honey. Bake at 375 until browned. (The mini muffins took about 7 or 8 minutes)
