Wondering what to do with that bounty of cucumbers you can’t get rid of? Or maybe you’re like me and every time you walk into work there are various garden vegetables just waiting to be adopted by someone. The avid gardeners are pleading, “PLEASE, take some of these home! I’ve got TONS more.”
It seems that its always cucumbers too. Like no one can gauge how many cucumbers to plant and thus feel the need to bestow their bounty on unsuspecting friends. But they can’t just give you one, they feel the need to fill up a whole sack and put your name on it.
Being there is always an onion in my fridge waiting to be loved, I have a solution for all the cucumbers. By the way, these cucumbers came partially from Kasie and others from work.
I chopped the onions and cucumbers into thin slices and then layered them evenly in as many jars as they filled. Then mix the “juice” for each jar. (You could double or triple this and measure this once, but this doesn’t always work as the sugar doesn’t dissolve for a while and thus making the measurements different in each jar. Does that even make sense? Just try it and you’ll know what I mean.)
The juice concoction is:
1/3 c. white vinegar
5 T. water (about 1/4 c. if you’re lazy)
1 cup sugar
1/2 t. salt
1/2 t. mustard seeds
dash pepper
Seal tight and shake well once an hour until the sugar is dissolved. Store in refrigerator. These keep for a few weeks, but they shouldn’t be stored like normal canned goods. In fact they don’t have to go in jars, I just like it that way.
