Taco Salad
This is by no means a new recipe for me. In fact last night I was surprised to find that I had never blogged about this. My mom has been making this salad for years and years.
This is a great warm salad. Which makes it great for a summer salad that needs a little meat! Or it works well in the winter time when eating something cold is out of the question.
Start by browning a pound of ground beef. Add taco seasoning, a little water, and one can of drained and rinsed kidney beans. Heat until warm again. Last night I used black beans and it worked great.
Then just place crushed tortilla chips in a bowl, add salad greens and any veggies you like. Spoon beef and beans over salad. Top with cheese and dressing. I personally like Catalina on mine, but taco sauce and a good salsa works well too.

I like Catalina on mine too! But I can handle taco sauce in an emergency. That's one of my favorite salads too and I like the homemade version so much better than the restaurant versions. Weird, huh?
OH HECK! I didn't even see the part where you said you made my chicken noodle soup! I'm so flattered. Blush. Thank you for the review! Homemade noodles--nothin' better and they're not hard at all.
Yeah the chicken noodle soup was very good!
