Savory Tortilla Soup

Tonight I tried a soup recipe from another new cookcook, Savory Soups and Stews. I changed it a little. You know just the usual: add an onion, garlic, put it in a crock pot so you don’t have to watch a stove all day…..

Here’s the recipe:

1 pound cooked chicken, cut into small chunks
1 package chili seasoning
2 t. chili powder
2 t. cumin
1 T. olive oil
1 onion, diced and sauted in oil
1 can diced tomatoes, undrained
1 can pinto beans, undrained
1 can mexicorn, drained and rinsed
1 1/2 c. water
3 T. Chipotle salsa
1 t. rooster sauce (the kind at Chinese food restaurants)
garlic powder, salt and pepper to taste
tortilla chips, cheddar cheese, sour cream and fresh chopped cilantro to top.

And for a sweet finish, I pulled out a yummy box of Jello Oreo Cheesecake:
