Camp food

We are really into camping around here. In fact, we probably go a little less than once a month. Last month we went to Petit Jean State Park in Arkansas. It was so wonderful that I booked a few nights for my birthday weekend this spring. Here’s a picture of the natural bridge found on the “grotto” hike:

In my opinion, there is a tie for the most important thing to consider when planning a camping trip: where you’re going to sleep and what you’re going to eat. Uncomfortable sleeping arrangements make for a bad night and a worse day dealing with sore joints and muscles. But bad food can ruin a camping trip also.

Justin and Nick seem to always sneak in a package of cheddar brats.

However, the point of this blog entry is to tell show a cool idea for making soup/stew over the fire without having to pack fresh vegetables. All you need is a dutch oven, water, bouillon, meat of your choice and some “Just Veggies”. These are freeze dried vegetables (peas, carrots, corn, bell peppers and tomatoes) that are certified organic and only need hot water in order to have a lightweight delicious and nutritious camping meal. I found these at a local natural food market, but you can find the whole line here. In addition to vegetables they have many different fruits. You can even buy a whole tub of the strawberries similar to those in Special K- Red Berries cereal. No joke. Your days of buying that cereal just to pick out the strawberries are over.
One more suggestion. Jer brought to out last camping trip the most amazing invention: Mountain pies.


This is Jer holding a cherry mountain pie and Nick being weird. (What can I say?) So, you may be wondering, what exactly is a mountain pie? It is merely two slices of buttered bread, placed into a gadget like this (only square) and filled with whatever you want. We made pie for dessert and teh next morning had breakfast sandwiches filled with bacon, eggs and cheese. Mmm…
